Ingredients
- 1½ cups chocolate chips (semi-sweet or milk chocolate)
- 1 tbsp coconut oil (optional, for smooth melting)
- ½ cup unsalted butter, softened
- ¼ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- 1 cup all-purpose flour (heat-treated)
- ½ tsp salt
- ½ cup mini chocolate chips
Instructions
- Prep the pan: Line a mini muffin tin with paper or silicone liners.
- Melt the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
- Create the base: Spoon 1 teaspoon of melted chocolate into each liner and spread it up the sides. Freeze for 10 minutes to set.
- Make the filling: In a bowl, cream butter with both sugars until smooth. Mix in vanilla and milk. Add heat-treated flour and salt, stirring to combine. Fold in mini chocolate chips.
- Assemble: Roll small balls of dough and press them into the chocolate shells. Flatten gently to create an even surface.
- Top with chocolate: Spoon a thin layer of melted chocolate over the cookie dough to seal the cups. Smooth with a spoon.
- Chill: Return to freezer or fridge until the tops are set, about 15–20 minutes.
- Serve: Once firm, peel away liners and enjoy. Store extras in the fridge or freezer.
Notes
Heat-treat the flour by spreading it on a baking sheet and baking at 350°F for 5–7 minutes to kill bacteria. For added flavor, sprinkle sea salt on top or drizzle with white chocolate before chilling. Use dairy-free alternatives for a vegan version.
