Description

Made with mashed chickpeas, mayo, Dijon mustard, and fresh crunchy veggies, it’s the perfect easy lunch or snack that’s both satisfying and healthy. With melty cheese, crisp lettuce, and toasted bread, it’s comfort food that’s ready in just 15 minutes!


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 small red onion, finely chopped
  • 1 celery stalk, diced
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 46 slices whole-grain bread, toasted
  • 24 slices of cheese (cheddar, Swiss, or provolone)
  • Lettuce or spinach leaves
  • Tomato slices
  • Pickles (optional)

Instructions

  1. Mash the Chickpeas: Add drained chickpeas to a large bowl and mash with a fork or potato masher until mostly smooth but still chunky for texture.
  2. Mix the Base: Stir in mayonnaise, Dijon mustard, lemon juice, garlic powder, and smoked paprika until creamy and well combined.
  3. Add Crunch and Flavor: Fold in diced onion and celery. Season with salt and pepper to taste.
  4. Toast the Bread: Lightly toast the bread slices until golden and crisp.
  5. Assemble the Sandwich: Layer lettuce, chickpea mixture, cheese, tomato slices, and pickles between the toasted bread slices. Press gently.
  6. Serve: Cut in half and serve immediately, or wrap for a grab-and-go lunch.

Notes

To prevent soggy sandwiches, assemble just before serving. Store the chickpea filling separately in an airtight container for up to 4 days. For a lighter version, swap mayo with Greek yogurt or use vegan alternatives.
