- 1/2 cup cold butter, cubed
- 3/4 cup cold milk
Instructions
- Sauté the Vegetables: In a large skillet or saucepan, melt butter over medium heat. Add onion, carrots, and celery. Cook until tender, about 5–7 minutes. Stir in garlic and cook for 1 minute.
- Create the Sauce: Sprinkle flour over the vegetables and stir to coat. Cook for 2 minutes. Slowly pour in the chicken broth while stirring. Add milk and continue to stir until the mixture thickens, about 5 minutes.
- Add the Chicken: Stir in the shredded chicken, peas, thyme (if using), salt, and pepper. Remove from heat once everything is heated through and combined.
- Make the Biscuit Dough: In a bowl, whisk flour, baking powder, and salt. Add cubed cold butter and use fingers or a pastry cutter to combine until crumbly. Stir in milk until a dough forms. Do not overmix.
- Assemble: Pour the filling into a greased 9×13-inch baking dish. Drop spoonfuls of biscuit dough over the filling.
- Bake: Bake at 400°F (200°C) for 25 minutes or until biscuits are golden brown and cooked through.
- Serve: Let cool for 5–10 minutes before serving for best texture.

Use rotisserie chicken for convenience. For a shortcut, substitute homemade biscuit dough with store-bought refrigerated biscuits. Add shredded cheddar to the biscuit mix for a cheesy twist.
