Ingredients

  • 1 bag Nacho Cheese Doritos (about 1012 oz)
  • 2 cups cooked chicken (shredded or diced)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 1 cup canned corn (drained)
  • 1 packet taco seasoning
  • 2 cups Mexican cheese blend (shredded)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Prepare the Casserole:
    • First Layer: Spread half of the crushed Doritos evenly on the bottom of the baking dish.
    • Chicken Mixture: In a large bowl, mix together shredded chicken, cream of chicken soup, sour cream, Rotel, corn, taco seasoning, and 1 cup of the Mexican cheese blend until well combined. Spread this mixture over the Doritos layer.
    • Top Layer: Sprinkle the remaining Doritos and cheese over the top of the chicken mixture.
  • Bake:
    • Bake the casserole in the preheated oven for 20 minutes.
    • Remove from the oven, add the remaining cheese and Doritos, then return to the oven for an additional 5-7 minutes, or until the cheese is melted and the casserole is bubbly.
  • Serve:
    • Let the casserole sit for a few minutes before serving to allow the layers to set. Enjoy!
