Description
These Cheesy Mashed Potato Roll Ups are crispy on the outside, cheesy and creamy on the inside, and perfect for using up leftover mashed potatoes. Easy to make, kid-friendly, and great as a snack, side dish, or party appetizer.

- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese (or mozzarella)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups breadcrumbs (panko or regular)
- Oil for frying (vegetable or canola)
Instructions
- Mix the Filling: In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, parsley, garlic powder, onion powder, salt, and pepper until well blended.
- Shape the Roll Ups: Scoop out a portion of the potato mixture and shape into small log-shaped rolls (about 2 inches long).
- Coat the Rolls: Roll each potato log in flour, dip into beaten eggs, and coat evenly with breadcrumbs. Set aside on a tray.
- Fry Until Golden: Heat oil in a skillet over medium heat. Fry roll ups in batches, turning occasionally, until golden brown and crispy, about 3–4 minutes per side.
- Drain and Serve: Remove from oil and place on a paper towel-lined plate to drain excess oil. Serve hot with ketchup, ranch, or your favorite dipping sauce.
Notes
For a lighter version, bake the roll ups at 400°F (200°C) for 20–25 minutes until golden and crispy. Add diced ham, bacon bits, or scallions to the potato mixture for extra flavor. Best served warm.
