- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Optional: paprika or Italian seasoning for extra flavor
Instructions
- Preheat the Oven: Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
- Cook the Potatoes: Boil diced potatoes for 8–10 minutes until just tender. Drain well.
- Mix the Sauce: In a bowl, whisk together cream of chicken soup, milk, melted butter, garlic powder, onion powder, salt, and pepper.
- Assemble: Add potatoes, chicken, and broccoli to the baking dish. Pour sauce over the top and gently stir.
- Add Cheese: Sprinkle cheddar and mozzarella evenly over the casserole.
- Bake: Cover with foil and bake for 30 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.
- Rest and Serve: Let rest for 5–10 minutes before serving.
Notes
Cut potatoes into small, even pieces for faster cooking. You can swap broccoli with cauliflower or add cooked bacon for extra flavor. Letting the casserole rest helps it set before serving.
