Ingredients
For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1/2 tsp vanilla extract
For the Cookie Dough:

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs
-
2 tsp vanilla extract

3 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

2 cups chocolate chips
Instructions

Make Cheesecake Filling:
In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop into small teaspoons, place on a parchment-lined tray, and freeze for 20–30 minutes. -
Make Cookie Dough:
In a large bowl, beat butter and both sugars until fluffy. Add eggs and vanilla; mix well. In another bowl, whisk together flour, baking soda, and salt. Slowly add dry mix to the wet ingredients. Stir in chocolate chips. -
Chill Dough:
Chill cookie dough for 15–20 minutes to make it easier to handle. -
Assemble Cookies:
Flatten 1.5 tbsp cookie dough in your palm. Place a frozen cheesecake ball in the center. Cover with 1 tbsp more cookie dough and seal edges. Roll into a ball. -
Bake:
Place on a parchment-lined baking sheet. Bake at 350°F (175°C) for 13–15 minutes or until edges are golden. Let cool before serving.
Notes

Add a few chocolate chips on top before baking for a bakery-style look.

Store leftovers in an airtight container at room temp for 2 days or in the fridge for up to 5 days.
