Ingredients
- 1 ¼ cups all-purpose flour

- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ½ cup butter (for caramel)
- ½ cup brown sugar (for caramel)
- ¼ cup heavy cream
- ¼ teaspoon salt
- 1 cup pecan halves
- 2 tablespoons brown sugar (for topping)
- 1 tablespoon melted butter
Instructions
- Prepare the Crust: In a large bowl, mix flour and salt. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes. Roll out and place in a 9-inch pie dish.
- Make the Caramel Sauce: Melt butter and brown sugar in a small saucepan over medium heat. Stir until bubbling, then whisk in cream and salt. Cook for 1–2 minutes until smooth and slightly thickened. Remove from heat and let cool.
- Mix the Apple Filling: In a large bowl, combine sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla. Toss until well coated.
- Assemble the Pie: Pour half the caramel into the bottom of the crust. Add apple filling, drizzle with the remaining caramel, and top with the pecan mixture (pecans mixed with brown sugar and melted butter).
- Bake: Bake at 375°F (190°C) for 50–60 minutes, until golden and bubbly. Cover the crust edges with foil if they brown too fast.
- Cool and Serve: Let cool for at least one hour to set. Serve warm with vanilla ice cream or an extra drizzle of caramel sauce.
Notes
For best results, mix tart and sweet apples for balanced flavor. Don’t overcook the caramel—remove it from the heat once it coats a spoon. Store leftovers in the fridge for up to 5 days or freeze for up to 2 months.
