These Cajun Chicken Sloppy Joes are a spicy, zesty twist on the traditional sandwich. Ingredients
1 lb ground chicken
1 bell pepper, chopped
1 small onion, chopped
2 garlic cloves, minced
2 tbsp tomato paste
½ cup chicken broth
1 tbsp Worcestershire sauce
2 tsp Cajun seasoning
Salt and black pepper to taste
1 tbsp olive oil
4 brioche or hamburger buns
Optional toppings:
Shredded cheese
Pickles
Coleslaw
Sliced avocado
Instructions
Step 1: Sauté the Veggies
In a large skillet, heat olive oil over medium heat.
Add chopped onion and bell pepper. Sauté for 3-4 minutes until softened.
Add garlic and cook for another minute.
Step 2: Cook the Chicken
Add ground chicken to the skillet.
Cook until browned, breaking it up with a spoon (about 6-8 minutes).
Step 3: Add Sauce Ingredients
Stir in tomato paste and Cajun seasoning.
Pour in chicken broth and Worcestershire sauce.
Stir well and let simmer for 5-6 minutes until thick and saucy.
Season with salt and pepper to taste.
Step 4: Assemble
Toast buns if desired.
Scoop chicken mixture onto bottom buns.
Add any toppings you like.
Top with the other half of the bun and serve warm!
Notes
Want it less spicy? Use 1 tsp Cajun seasoning or swap with smoked paprika.
Use ground turkey or beef if you don’t have chicken.
