Description

This Bruschetta with Roasted Cherry Tomatoes and Basil is ultra-cooked, ultra-crispy, toasted, sauced, dripping, and juicy. Sweet roasted tomatoes meet creamy cheese, garlic-rubbed toast, and fresh basil for the ultimate simple appetizer.


Ingredients

  • 2 cups cherry tomatoes, halved
  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste
  • 1 baguette or sourdough loaf, sliced
  • 1 garlic clove, whole (for rubbing toast)
  • 1 cup ricotta or crumbled feta (optional)
  • Fresh basil leaves, torn
  • 2 teaspoons balsamic glaze or balsamic vinegar

Instructions

  1. Prepare the Tomatoes: Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet. Drizzle with 2 tablespoons olive oil, add minced garlic, and season with salt and pepper. Toss to coat.
  2. Roast: Roast for 20–25 minutes until tomatoes are soft, saucy, caramelized, and slightly blistered.
  3. Toast the Bread: Slice the baguette and brush each piece with the remaining olive oil. Toast in the oven or a skillet until ultra-crispy and golden. Rub each warm slice with the whole garlic clove.
  4. Add Cheese (Optional): Spread ricotta or sprinkle feta onto each toasted slice.
  5. Assemble: Spoon roasted tomatoes over each slice, letting the juices soak slightly into the toast. Top with torn basil leaves.
  6. Finish: Drizzle with balsamic glaze or vinegar. Serve immediately.

Notes

For extra crispy bread, toast both sides. For deeper flavor, roast tomatoes an additional 5 minutes. Assemble only before serving to avoid soggy toast.
