Ingredients
For the Crust:

1 cup graham cracker crumbs

For the Cheesecake Filling:

16 oz cream cheese (room temperature)

½ cup sugar

1 teaspoon vanilla extract

2 large eggs

¼ cup sour cream or Greek yogurt
For the Berry Swirl:

½ cup mixed berries (fresh or frozen)

1 tablespoon sugar

1 teaspoon cornstarch
Instructions

Preheat oven to 325°F (163°C). Line a 12-cup muffin pan with cupcake liners.

Make the crust:

Mix graham cracker crumbs, melted butter, and sugar in a bowl.

Press about 1 tablespoon of the mixture into the bottom of each cupcake liner.

Bake for 5 minutes. Let cool.

Prepare the berry swirl:

In a small saucepan, combine berries, sugar, and cornstarch.

Cook over medium heat, stirring and mashing the berries until thick and jammy.

Let cool.

Make the cheesecake filling:

Beat the cream cheese until smooth.

Add sugar and mix until creamy.

Mix in eggs one at a time.

Stir in vanilla and sour cream or yogurt until smooth.

Spoon cheesecake batter over each crust until about ¾ full.
