Ingredients

  • 1 ½ lbs (680 g) beef sirloin or tenderloin, sliced thin against the grain
  • 2 tbsp butter + 1 tbsp oil, for sautéing
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 ½ cups beef broth (low sodium)
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ½ cup sour cream
  • 12 oz (340 g) egg noodles
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Prep and Season: Slice beef into thin strips and season lightly with salt and pepper.
  2. Cook Noodles: Boil egg noodles in salted water until al dente. Drain, toss with a bit of butter, and set aside.
  3. Sear Beef: In a large skillet over medium-high heat, add butter and oil. Brown beef strips in batches, 1–2 minutes per side, then remove to a plate.
  4. Sauté Veggies: In the same pan, add onion and cook 2–3 minutes. Add garlic and mushrooms, cooking until mushrooms are browned and tender.
  5. Make Sauce: Sprinkle flour over vegetables and stir. Slowly whisk in beef broth, Dijon mustard, and Worcestershire sauce. Simmer 5–7 minutes until slightly thickened.
  6. Finish: Return beef and juices to the pan. Stir to coat and simmer 2–3 minutes. Remove from heat, then stir in sour cream until smooth.
  7. Serve: Spoon the creamy beef mixture over the noodles and garnish with parsley. Serve immediately.

Notes

For best results, slice beef thinly and don’t overcook it. Add sour cream off the heat to prevent curdling. Leftovers reheat well with a splash of broth or milk to refresh the sauce.
