- 1 sheet puff pastry, thawed
- 8 oz brie cheese, rind removed if preferred, cut into small cubes
- 1/2 cup cranberry sauce (homemade or store-bought)
- 1 tablespoon honey (optional, for sweetness)
- Fresh rosemary or thyme leaves, for garnish
- Cooking spray or butter, for greasing the muffin tin
Instructions
- Prepare the Oven and Pan: Preheat the oven to 375°F (190°C). Lightly grease a mini muffin tin with butter or cooking spray.
- Roll and Cut the Pastry: On a lightly floured surface, roll out the puff pastry sheet and cut into 2-inch squares.
- Form the Cups: Press each pastry square gently into the muffin tin to form little cups with slightly overlapping corners.
- Add the Brie: Place a cube of brie cheese into each pastry cup.
- Add Cranberry Sauce: Spoon about 1/2 teaspoon of cranberry sauce over the top of the brie. Drizzle honey if desired.
- Bake: Bake for 13–15 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
- Cool and Garnish: Let cool for 5 minutes, then top with a small sprig of rosemary or thyme before serving.

Serve these bites warm for the best flavor. To make ahead, assemble and refrigerate before baking. For variation, try fig jam or raspberry preserves instead of cranberry sauce, or use camembert cheese for a bolder flavor.
