- 1 sheet puff pastry, thawed
- 4 oz goat cheese, crumbled
- 8–10 spears asparagus, trimmed and cut into thirds
- 1 tbsp olive oil
- 1 tbsp honey
- Salt & black pepper, to taste
- 1 egg, beaten (for egg wash)
- 2 tbsp Parmesan cheese, grated (optional)
- Fresh thyme or basil (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare puff pastry: Roll out the pastry and cut it into 4 equal squares. Place them on the baking sheet.
- Score the edges: Lightly score a 1/2-inch border around each square and brush the edges with the beaten egg.
- Layer toppings: Sprinkle goat cheese in the center of each pastry. Toss asparagus with olive oil, salt, and black pepper, then arrange on top.
- Bake: Place the tartlets in the oven and bake for 15-18 minutes, or until golden brown and crispy.
- Finish & serve: Drizzle with honey, sprinkle with Parmesan, and garnish with fresh thyme or basil. Serve warm.
Notes
- If you want extra crispy asparagus, roast it separately before adding it to the tartlets.
- For meal prep, assemble tartlets a few hours in advance and bake when needed.
- If you prefer a sweeter version, add caramelized onions or figs.
