Description

These Apple Spiced Stuffed Sweet Potatoes are warm, cozy, and packed with fall flavor. Tender baked sweet potatoes are filled with sautéed apples, cinnamon, pecans, and cranberries for the perfect sweet and comforting side dish or light meal. A simple, wholesome recipe that feels like dessert but is nutritious enough for everyday meals.

  • 4 medium sweet potatoes
  • 2 tablespoons butter (or coconut oil for dairy-free)
  • 2 apples, peeled and diced (Honeycrisp, Gala, or Fuji)
  • 2 tablespoons brown sugar or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves (optional)
  • 1/4 cup chopped pecans (or walnuts)
  • 1/4 cup dried cranberries
  • Pinch of salt

Instructions

  1. Bake the Sweet Potatoes: Preheat oven to 400°F (200°C). Wash and dry sweet potatoes, then poke a few holes in each with a fork. Place on a baking sheet and bake for 45–60 minutes, or until soft.
  2. Prepare the Apple Filling: While potatoes bake, melt butter in a skillet over medium heat. Add diced apples and sauté 3–4 minutes until slightly soft.
  3. Add Sweetness & Spice: Stir in brown sugar or maple syrup, cinnamon, nutmeg, cloves, cranberries, pecans, and a pinch of salt. Cook 2–3 more minutes until apples are tender and mixture becomes glossy.
  4. Open the Sweet Potatoes: Once baked, let cool slightly. Slice down the center and gently fluff the insides with a fork.
  5. Fill & Serve: Spoon the warm apple spice mixture into each sweet potato. Top with extra pecans or a drizzle of maple syrup if desired. Serve warm.

Notes

For extra sweetness, add a splash of maple syrup before serving. To make ahead, bake the sweet potatoes and prepare the apple filling separately, then warm and assemble before serving. For a dessert-style version, add a scoop of vanilla yogurt or ice cream.
