These Apple Spiced Stuffed Sweet Potatoes are warm, cozy, and packed with fall flavor. Ingredients
- 4 medium sweet potatoes
- 2 tablespoons butter (or coconut oil for dairy-free)
- 2 apples, peeled and diced (Honeycrisp, Gala, or Fuji)
- 2 tablespoons brown sugar or maple syrup
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves (optional)
- 1/4 cup chopped pecans (or walnuts)
- 1/4 cup dried cranberries
- Pinch of salt
Instructions
- Bake the Sweet Potatoes: Preheat oven to 400°F (200°C). Wash and dry sweet potatoes, then poke a few holes in each with a fork. Place on a baking sheet and bake for 45–60 minutes, or until soft.
- Prepare the Apple Filling: While potatoes bake, melt butter in a skillet over medium heat. Add diced apples and sauté 3–4 minutes until slightly soft.
- Add Sweetness & Spice: Stir in brown sugar or maple syrup, cinnamon, nutmeg, cloves, cranberries, pecans, and a pinch of salt. Cook 2–3 more minutes until apples are tender and mixture becomes glossy.
- Open the Sweet Potatoes: Once baked, let cool slightly. Slice down the center and gently fluff the insides with a fork.
- Fill & Serve: Spoon the warm apple spice mixture into each sweet potato. Top with extra pecans or a drizzle of maple syrup if desired. Serve warm.
Notes
For extra sweetness, add a splash of maple syrup before serving. To make ahead, bake the sweet potatoes and prepare the apple filling separately, then warm and assemble before serving. For a dessert-style version, add a scoop of vanilla yogurt or ice cream.
