Ingredients
- 2 9-inch pie crusts (store-bought or homemade)
- 2 medium apples, peeled and diced (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon all-purpose flour
- 1 egg, beaten (for egg wash)
- Coarse sugar (optional, for sprinkling)
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Make the filling: In a bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and flour. Stir well and let sit for 10 minutes to release juices.
- Prepare the dough: Roll out your pie crusts and use a round cutter (4–5 inches) to cut out circles. You should get 10–12 total.
- Fill the pies: Spoon about 1–2 tablespoons of the apple mixture into the center of half the dough circles.
- Seal the pies: Place another dough circle on top. Press edges to seal and crimp with a fork. Cut a small slit on top for steam to escape.
- Bake: Brush each pie with beaten egg and sprinkle with coarse sugar. Bake for 20–25 minutes, or until golden brown.
- Cool and serve: Let them rest for 5 minutes before serving. Best enjoyed warm!
Notes
Use a mix of apple varieties for a more complex flavor. Freeze unbaked pies for future use—just bake straight from frozen with a few extra minutes. For a glazed finish, drizzle with powdered sugar icing once cooled.
