- 1 teaspoon cinnamon
- For the Cheesecake Filling:
- 24 oz (3 blocks) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- For the Apple Layer:
- 3 large apples (Granny Smith or Honeycrisp), peeled and sliced

- For the Crisp Topping:
- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup unsalted butter, melted
Instructions
- Prepare the Crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool.
- Make the Cheesecake Filling: Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in vanilla, sour cream, and flour until creamy and smooth.
- Prepare the Apple Layer: Toss sliced apples with brown sugar, cinnamon, nutmeg, and lemon juice until evenly coated.
- Make the Crisp Topping: Combine oats, brown sugar, flour, salt, and cinnamon. Stir in melted butter until crumbly.
- Assemble the Cheesecake: Pour cheesecake batter over crust. Layer apples on top, then sprinkle the crisp topping evenly.
- Bake: Bake for 60–70 minutes or until the center is set but slightly jiggly. Turn off the oven and let cool for 1 hour with the door open.
- Chill and Serve: Refrigerate for at least 4 hours or overnight. Serve chilled with caramel drizzle or whipped cream.
Notes
For best results, chill overnight before serving. Granny Smith apples give a tart balance, while Honeycrisp adds sweetness. You can make this dessert a day ahead—it keeps perfectly for up to 5 days in the refrigerator or 2 months in the freezer.
