Description
This Apple Cider Donut Cake is a soft, spiced bundt cake that captures all the cozy flavors of fall in every bite. Inspired by classic apple cider donuts, this easy cake recipe combines warm cinnamon, nutmeg, and reduced apple cider for a deep, rich flavor. Perfect for chilly days, holiday gatherings, or simply when you crave something sweet and comforting.
Ingredients
- 1 ½ cups apple cider (reduced to ¾ cup)
- 2 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 1 ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 cup granulated sugar
- ½ cup packed brown sugar
- ¾ cup unsalted butter, melted and cooled
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk or sour cream
- For Coating:
- ¼ cup melted butter
- ½ cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
- Reduce the Apple Cider: Pour apple cider into a small saucepan and simmer over medium heat until it reduces to about ¾ cup. Let cool completely.
- Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan thoroughly.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Combine Wet Ingredients: In a large bowl, whisk melted butter, both sugars, eggs, reduced cider, and vanilla until smooth.
- Combine and Mix: Gradually add dry ingredients, alternating with buttermilk. Stir just until combined—do not overmix.
- Bake: Pour batter into the prepared pan and bake for 45–50 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
- Coat the Cake: Brush warm cake with melted butter, then roll or sprinkle with the cinnamon-sugar mixture until evenly coated.
- Serve: Slice and enjoy warm with a cup of coffee or hot apple cider.
Notes
Use fresh, unfiltered apple cider for the best flavor—apple juice won’t give the same depth. Reduce the cider to concentrate the taste and prevent excess moisture. For a twist, drizzle with apple cider glaze or caramel sauce. Store covered at room temperature for 3 days or freeze slices for up to 2 months.
