Instructions

  1. Reduce the Apple Cider: Pour apple cider into a small saucepan and simmer over medium heat until it reduces to about ¾ cup. Let cool completely.
  2. Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan thoroughly.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. Combine Wet Ingredients: In a large bowl, whisk melted butter, both sugars, eggs, reduced cider, and vanilla until smooth.
  5. Combine and Mix: Gradually add dry ingredients, alternating with buttermilk. Stir just until combined—do not overmix.
  6. Bake: Pour batter into the prepared pan and bake for 45–50 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
